Gluten-free chocolate cake mix

Gluten, dairy, corn, soy free, Vegan friendly

 

Ingredients: teff flour, cocoa powder, quinoa/amaranth flour blend, millet flour, ground chia seeds, ground flax seeds, psyllium husks, baking soda, GF baking powder , sea salt

Additional ingredients: 1 egg*, 1/2-1 c sweetener of choice 1 c milk of choice, 1 c water or coffee, 1/4 c oil of choice, 1 tsp lemon juice or apple cider vinegar, vanilla extract (optional)

*You can use any vegan egg. With flax eggs the cake will be somewhere between a cake and a brownie. It works superbly for cupcakes.

Instructions:
 1. Oil or line with parchment paper an 8x8
     pan
 2. In a small bowl mix lemon juice/vinegar
     and milk
 3. Add the flour mix to a mixing bowl
 4. Add wet ingredients to the mixing bowl
 5. Mix well
 6. Pour into pan
 7. Bake at 350°F for 40 min or until the cake
     starts to pull away from the the sides and
     a toothpick stuck in the middle comes out
     clean
